No Bake Dark Chocolate Coconut Love Bombs

- Here is what you need to make these little bombs of love:
- 2⅔ cups of NOW Real Food® Unsweetened Shredded Coconut (no added artificial colors, flavors or preservatives – so delicious)
- 6 tsp. Now Foods Liquid Coconut Oil
- 6 TBS. Now Foods Organic Maple Syrup – Grade A (My kids won’t use anything else on their pancakes now!)
- 1 tsp. Now Foods French Vanilla Sweetener or Vanilla Extract
- 1 tsp. of salt
- 16 oz. Organic Dark Chocolate or Milk Chocolate (I prefer dark for these love bombs)
- Mix the coconut and coconut oil in a food mixer. I use the classic KitchenAid mixer and love it for all my baking needs.
- Add the maple syrup, vanilla and salt. Blend well until it is a batter.
- Roll into little balls and let harden in the fridge for 2-3 hours. If you are in a hurry put them in the freezer for 1 hour.
- Melt your chocolate in a double boiler or the microwave. Dip your love bombs in the chocolate and sprinkle with coconut.
- Store these in an airtight container and keep refrigerated or they'll melt.
