No Bake Cookies with Coconut Oil

Serves: 2 dozen
- 3½ C. rolled oats
- ½ C. liquid coconut oil
- ½ C. creamy peanut butter
- ½ C. of milk (any type of milk will work)
- 2 C. granulated or raw sugar
- ¼ C. unsweetened cocoa powder
- 1 tsp vanilla extract
- Line 2 large baking sheets with wax or parchment paper and set aside.
- Add all the ingredients, except the oats, to a medium size saucepan.
- Heat on medium/high heat bringing to a rolling boil.
- Once the mixture begins boiling set a timer for 4 minutes and stir consistency for the entire 4 minutes, scraping the sides of the saucepan as needed.
- You will see the mixture beginning to pull away from the saucepan sides. Keep stirring until the timer goes off.
- Pour in the rolled oats and stir to coat.
- Drop by large tablespoon onto the wax/parchment paper and let set about 25 minutes.
