Making dozens of different holiday cookies and decorating them is something I have great memories of as a child. Licking the spatula, being full of flour, giggling, licking my fingers when I was told not to (come on you have to take a lick) and all of us trying to outdo the other in the decorating department. All of the colored frosting, sprinkles and the while we decorated magically other cookies were made for us to sample. It was simply magical and sweet as can be.

I carry this tradition out for my own children. Despite the mess and the effort it takes, I love that they look forward to the baking, decorating and sampling. This year while the kiddos decorated 5 dozen sugar cookies, my sister and I made the most delicious no-bake dark chocolate dipped coconut balls. I call them “love bombs” and O.M.G. Just be warned that if you make these, they are addictive.

Recipe for No-Bake Dark Choc. Coconut Balls aka" Love Bombs"

Here is what you need to make these little bombs of love:

Directions:

  1. Mix the coconut and coconut oil in a food mixer. I use the classic KitchenAid mixer and love it for all my baking needs.
  2. Add the maple syrup, vanilla and salt. Blend well until it is a batter.
  3. Roll into little balls and let harden in the fridge for 2-3 hours. If you are in a hurry put them in the freezer for 1 hour.
  4. Melt your chocolate in a double boiler or the microwave. Dip your love bombs in the chocolate and sprinkle with coconut.

These need to stay in the fridge or they melt and become too soft. This recipe yields 12-24 love bombs (or more) depending on how big or small you make your balls!

Ingredients

  • 2⅔ cups of NOW Real Food® Unsweetened Shredded Coconut (no added artificial colors, flavors or preservatives – so delicious)
  • 6 tsp. Now Foods Liquid Coconut Oil
  • 6 TBS. Now Foods Organic Maple Syrup – Grade A (My kids won’t use anything else on their pancakes now!)
  • 1 tsp. Now Foods French Vanilla Sweetener or Vanilla Extract
  • 1 tsp. of salt
  • 16 oz. Organic Dark Chocolate or Milk Chocolate (I prefer dark for these love bombs)
