Easy and Healthy Summertime or Anytime Dip

Summertime is busy. In June alone I have a wedding shower, two graduation parties and four birthday parties. This doesn’t include the last minute text messages from friends inviting us over for a weekend BBQ because the weather is nice. There’s always something going on. Which is why, I like to have quick and easy recipes in my back pocket. Appetizers and dishes to pass that I can throw together without a ton of time or hassle. I mean really, who wants to spend all their time in the kitchen when the weather is so nice? Not me!

One recipe that I’ve adapted over the years is an easy hummus and Greek Yogurt dip. I say adapt because I like to use what I have on hand. A dip that pairs perfectly with tortilla chips, like the Late July Organic Seas Salt by the Seashore Multi-grain Tortilla Chips!  I almost always have the ingredients on hand and tortilla chips or crackers in the cupboard. One quick note before you make this recipe:  The Late July tortilla chips are highly addictive and if you’re not careful you could eat the dip all on your own! Which is why I make this for gatherings, so I have to share!

Here’s what you need and how to put this simple dip together and the printed version is below for your convenience:

  • 6-8 ounces of hummus (store bought or homemade)
  • 6-8 ounces of Greek Yogurt (I prefer Stonyfield’s organic Greek yogurt and because I use it so often, I Easy summertime greek yogurt and hummus dip for BBQ's!buy the 32 ounce container.)
  • Feta cheese, crumbled (You could use any shredded or crumbled cheese but I prefer feta.)
  • 1 cup of chopped up veggies of choice (I use whatever I have on hand but my favorites include cherry tomatoes and yellow and red peppers. You can get as creative with this as you want, the more veggies the better!)

Simply layer the ingredients. Start with the hummus. Add the Greek Yogurt and then the veggies. Sprinkle with cheese, fresh parsley and salt and pepper.  I’ve seen similar dips that blend the yogurt and hummus but I like to layer them!  Sometimes I’ll have a lot of hummus on my chip and other times more Greek yogurt! It’s like a surprise with each bite.

This is a super duper simple recipe. When I get invited last minute, it’s easy for me to throw together. Plus it is healthy and tastes good. I brought this to a birthday party on Saturday and everyone was asking me for the recipe. I could rattle off the ingredients in seconds. Even kids like this dip!
