Grapefruit & Strawberry Smoothie
(serves one)
Ingredients:
- 1 1/2 cups frozen grapefruit chunks
- 4 frozen strawberries, sliced in half
- 1/2 cup plain, Greek yogurt ( I prefer Stonyfield’s organic whole milk Greek yogurt)
- 1/2 banana
- Sweetener of choice
Instructions:
- Add the grapefruit, strawberries, banana, and yogurt to a powerful blender and blend until smooth and creamy.
- Scrape down the sides as needed, and add additional liquid if necessary. ** see note
- When the smoothie is done, taste and add sweetener to your liking.
- Serve immediately or store in the refrigerator for up to three days.
Notes:
- This smoothie is fresh, light, and delicious. The grapefruit is sweet and refreshing, and the strawberries add both flavor and color. A little yogurt pumps up the protein and helps fill you up!
- Even though the grapefruit is frozen, it still holds quite a bit of liquid, so we didn’t need to add any liquid to ours. Depending on how thick you like your smoothies, adding additional liquid is totally optional. If you choose to add it, you could use grapefruit juice, milk, or any milk substitute.
- The amount of sweetener you’ll use will vary greatly depending on how ripe your fruit is. Our grapefruit was extremely sweet, so we didn’t need much at all. And of course, you can use any kind of sweetener you like.
- The banana helps to thicken the smoothie and gives it a little body. That said, the flavor of banana can be a little overpowering, so we only used half of one.

When grapefruits are in season, we like to freeze them into individual chunks for smoothies. To do this, just peel the grapefruit, and cut it into large chunks. Line a large cookie sheet with wax paper, and arrange the grapefruit in a single layer. Freeze until solid and transfer to a freezer-safe bag.
To freeze strawberries, you can freeze them whole or sliced in half like ours.
