No Bake Cookies with Coconut Oil

Ingredients: 

  • 3 1/2 C. rolled oats
  • 1/2 C. liquid coconut oil
  • 1/2 C. creamy peanut butter
  • 1/2 C. of milk (any type of milk will work)
  • 2 C. granulated or raw sugar
  • 1/4 C. unsweetened cocoa powder
  • 1 tsp vanilla extract

Directions: 

No Bake Cookies with Coconut Oil

  1. Line 2 large baking sheets with wax or parchment paper and set aside.
  2. Add all the ingredients, except the oats, to a medium size saucepan.
  3. Heat on medium/high heat bringing to a rolling boil.
  4. Once the mixture begins boiling set a timer for 4 minutes and stir consistency for the entire 4 minutes, scraping the sides of the saucepan as needed. You will see the mixture beginning to pull away from the saucepan sides. Keep stirring until the timer goes off.
  5. Pour in the rolled oats and stir to coat.
  6. Drop by large tablespoon onto the wax/parchment paper and let set about 25 minutes.

*Makes about 1 doze large cookies OR 2 dozen smaller cookies.
