No Bake Cookies with Coconut Oil

Coconut oil is a staple in our home. We use it for making homemade scrubs, for hair masks, to remove makeup and for making no bake cookies. Yes, for making no bake cookies. Coconut oil great to use for baking and cooking because of it’s nutritional benefits.

Next time you have a recipe that calls for an oil or butter, consider trying liquid coconut oil instead. It has a mild flavor that enhances a recipe. If you haven’t tried baking with coconut oil, start with this easy no bake cookie recipe. It’s an easy recipe and it will satisfy your sweet tooth.

No Bake Cookies with Coconut Oil Recipe

No Bake Cookies with Coconut Oil

Ingredients: 

  • 3 1/2 C. rolled oats
  • 1/2 C. liquid coconut oil
  • 1/2 C. creamy peanut butter
  • 1/2 C. of milk (any type of milk will work)
  • 2 C. granulated or raw sugar
  • 1/4 C. unsweetened cocoa powder
  • 1 tsp vanilla extract

Directions: 

No Bake Cookies with Coconut Oil

  1. Line 2 large baking sheets with wax or parchment paper and set aside.
  2. Add all the ingredients, except the oats, to a medium size saucepan.
  3. Heat on medium/high heat bringing to a rolling boil.
  4. Once the mixture begins boiling set a timer for 4 minutes and stir consistency for the entire 4 minutes, scraping the sides of the saucepan as needed. You will see the mixture beginning to pull away from the saucepan sides. Keep stirring until the timer goes off.
  5. Pour in the rolled oats and stir to coat.
  6. Drop by large tablespoon onto the wax/parchment paper and let set about 25 minutes.
