Banana Bread Baked in a Mason Jar

I love banana bread, especially with chocolate chips. Yum! My brother-in-law, Jim is the cook in our family and everything he bakes or cooks turns out delicious. He recently made banana bread in a mason jar and it was delicious. A treat for sure because I’m certain this was far from low calorie or fat but what a great idea and a perfect gift to give others!

Ingredients Needed:

2/3 cup shortening

2 2/3 cups white sugar

4 eggs

5 cups mashed bananas, super ripe bananas in the black peels

2/3 cup water

1 / 2 cup of sour cream

1 / 2 cup of cream cheese

1 tablespoon vanilla

3 1/3 cups all-purpose flour

1/2 teaspoon baking powder

2 teaspoons baking soda

1 1/2 teaspoons salt

1 teaspoon ground cinnamon

1 teaspoon ground cloves

2/3 cup chopped pecans or chocolate chips

To make:

  • Simply mix cream and creamy ingredients with sugar until fluffy and then beat in eggs, bananas and water. Lastly add dry ingredients and if you choose stir in the pecan or chocolate chips.
  • Pour the mixture into 8 wide mouth pint size canning jars that have been lightly greased. Wipe the rims free of all batter drippings. Bake at 325 degrees for 40-50 minutes.
  • Using sterilized lids put the lid and ring on each jar which will seal as the cake begins to cool or when they are 100% cool press on the lid to insure that it is sealed. Eat when cool or refrigerate for no longer than 7 days, though some people say the bread keeps for much longer!
