With Jamie Oliver’s Food Revolution I’m even more inspired to cook healthy food for my children and inspire others. When we consider a French fry to be a vegetable for our children’s school lunch program, we have a huge problem! Children have to learn to associate food with fueling their bodies and for being healthy. We need to eat so we have energy and our body and brains can function. Children are dying and we as a society are accepting high sodium, saturated fat, processed foods with artificial sweeteners and preservatives being served to our children’s during their school day – that is not okay. It starts in our homes creating good habits and leading by example.

A recipe worth trying, Swiss Spinach Snack:

What You Need:

1 ½ Swiss cheese, shredded at room temperature

½ cup red bell pepper, chopped fine

1 C spinach, chopped

¼ C mayonnaise (we use low fat or fat free)

8 English muffin halves (I like to use whole wheat)

How to Make It:

Stir the cheese, peppers, spinach and mayonnaise together in a large mixing bowl.

Spread each English muffin half with the mixture.

Microwave on high for 30 seconds or until heated through.

Use mushrooms instead of the spinach and some mozzarella cheese instead and you have pizza samplers that are also sure to please.
