I’m a junkie when it comes to Mexican food (one bowl burritos for example or freezer burritos) . Tacos for dinner, I’m in heaven!! When we went to Chicago, my favorite meal was from Whole Foods…a burrito bowl. I like salsa, chips, spices, and more spices. I make up my own recipes all the time because I crave Mexican food. If you’re in the mood for Mexican food, check out this Verde Creamy Chicken Enchiladas (thank me later) recipe with NO cream of anything soup. Oh and if you’re on Weight Watchers, I’ve got your back. The points are calculated for you but note, this will vary depending on what ingredients and brand you use.
Verde Creamy Chicken Enchiladas
You may want to point out in your intro that this recipe does NOT have cream of anything soup in it, which is rare for this type of enchilada dish. Also, if you replace the flour tortillas with corn, this dish is gluten free!
INGREDIENTS:
1 – Traditional Size Rotisserie Chicken, Deboned and Shredded (or approximately 3 cups)
1 – 8 oz Block Cream Cheese, Softened
1 cup Sour Cream
1 cup Verde Salsa
1 cup Monterey Jack or Taco Blend Shredded Cheese
1/2 t. Onion Powder
1/2 t. Garlic Powder
1/2 t. Cumin
1/2 t. Black Pepper
3/4 t. Salt
12 Small Flour Tortillas
INSTRUCTIONS:
Preheat oven to 350 degrees. Mix cream cheese, sour cream, 3/4 cup of verde salsa, and all spices with a hand mixer until creamy and combined. Spray a 9×13 inch baking dish with non-stick cooking spray. Spoon approximately 2 heaping tablespoons of chicken and sauce mixture into a small tortilla, roll tortilla, and place into pan seam side down. Repeat with remaining tortillas.
Drizzle remaining verde salsa on top of enchiladas and sprinkle cheese on top of salsa. Bake at 350 degrees for 20 minutes or until cheese is melted and enchiladas are heated through.
